N690 is a stainless steel made by Böhler Edelstahl, an Austrian steelmaker whose alloys appear in everything from injection moulds to premium folding knives. Officially designated BÖHLER N690 (material number 1.4528, EN grade X105CrCoMo18-2), it is a corrosion-resistant martensitic chromium steel with a high carbon content and the addition of cobalt, molybdenum and vanadium. Two numbers stand out. The 17.3% chromium is what makes N690 genuinely corrosion-resistant — well above the levels needed for a stainless designation — while the 1.08% carbon is high for a stainless steel, providing the carbide population that gives the steel its wear resistance. Cobalt is the less common addition: it is not often seen in knife steels, and its presence here (shared with steels like VG-10) influences hardness response and edge behaviour.
Properties: where N690 shines
Böhler's own data sheet rates N690 across the properties that matter for blades:
- Wear resistance: very high — the standout rating, driven by the high carbon and chromium carbide content.
- Corrosion resistance: high — backed by 17.3% chromium; N690 is also approved for food and beverage contact.
- Toughness and ductility: good — reasonable resistance to chipping for a high-hardness stainless.
- Machinability: good — it grinds predictably during manufacture, which keeps production quality consistent.
- Polishability: good — it takes a fine finish, useful for both aesthetics and hygiene.
- Dimensional stability: good — it holds its shape through heat treatment.
The combination of very high wear resistance and high corrosion resistance is the reason N690 is a favourite in food-processing components and custom hand knives: it holds an edge in wet, demanding environments where many steels would rust or dull quickly.
N690 vs VG-10 and 440C
N690 is often compared with the other high-chromium stainless steels used in knives:
- vs VG-10: both steels carry a roughly 1% carbon load, around 15-17% chromium and a cobalt addition. N690's chromium is higher and its vanadium slightly leaner; in practice both are regarded as corrosion-resistant, easy-to-maintain stainless steels with good edge stability.
- vs 440C: N690 brings significantly more chromium (17.3% vs 440C's 16-18% range, at the upper end) plus molybdenum and cobalt additions that 440C lacks, which pushes N690's wear resistance rating higher.
Neither comparison produces a landslide winner for every task — but N690's official ratings put it on the wear-resistance side of the ledger while keeping corrosion resistance and polishability high, which is an unusual combination in one steel.
Sharpening N690
N690 sharpens like other high-carbon stainless steels: it is not as slow on the stones as the most wear-resistant super steels, but it is harder work than soft budget steels. Practical approach:
- Maintain a consistent angle across the bevel — a fixed-angle system removes the guesswork.
- Work through progressively finer sharpening stones, raising a consistent burr on one side before switching.
- Finish on a strop to remove the burr and refine the edge; the steel's good polishability rewards a clean final step.
Because N690 resists corrosion strongly, it tolerates wet sharpening without concern, and the edge does not need oiling mid-session the way carbon steels do.
Best uses for N690
Böhler lists N690 for food-processing components, custom hand knives, cutting and drilling applications. For the EDC buyer that translates to:
- Folding knives and fixed blades where corrosion resistance is a priority (humid climates, coastal carry, food prep).
- Kitchen and outdoor blades that see moisture regularly.

Bottom line
N690 is a well-rounded stainless steel with one exceptional strength: it combines very high wear resistance with high corrosion resistance and good polishability in a single alloy. It is not the absolute cutting-edge performer in edge retention — powder-metallurgy super steels like M390 sit above it — but it is tougher on corrosion, easier to maintain, and proven in demanding environments.
